Cooking Pumpkins for Fresh Pumpkin Pie

We have found that Luminas (white) or New Zealand Blues (grayish, blue) pumpkins are best for baking as they are naturally sweeter, creamier in texture, and yield a lot of puree per pumpkin.  While they are unusual colors on the outside, they all are orange on the inside.  

Wash the pumpkin and cut it in half.  Place cut side down on a jelly roll pan and bake in a 400 degree oven for at least one hour.  It depends on the size of the pumpkin, but you know it is done when it feels tender when gently pressed on.  Remove from oven and allow to cool for about 15 min.  Flip and scoop out slime and seeds and discard.  If you have some goats or pigs, they will love this tasty treat!  If you want the seeds for roasting, you should remove from the pumpkin prior to baking.  Scoop out the meat and puree in a blender or food processor. The puree can now be used in any recipe that calls for pumpkin puree.  It freezes very well and we freeze in 2 cup increments in quart size ziploc bags.  Once thawed, you can snip the corner and squeeze into the bowl.  Super easy!


Grandma's Pumpkin Pie Recipe

1 1/2 C. fresh cooked pumpkin, pureed
2 eggs
3/4 C. sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
Blend above ingredients together, then add
1/2 C. evaporated milk

Bake in a 9" unbaked pie shell at 450° for 15 minutes, then reduce to 350° for 45 minutes. Cool and top with fresh, homemade whipped cream.



Ginger Pumpkin Mousse

4 eggs
7 Tbs. sugar
1 Tbs. unflavored gelatin
1 1/2 C. fresh cooked pumpkin, pureed
3/4 tsp. ground cinnamon
1/2 tsp. freshly grated ginger
1/4 tsp. grated nutmeg
1 C. heavy cream
minced crystallized ginger

Beat eggs with sugar until mix is light colored and thick. Add gelatin and beat to blend well. Mix in pumpkin puree and spices and chill mixture until it begins to set up. Whip cream into soft peaks; fold in pumpkin mixture. Pour into 4-6 dessert dishes. Chill for 4 hours. Before serving, garnish with crystallized ginger
