Pumpkin Bars

2 cups sugar

2 cups pumpkin puree

3/4 cup oil

4 eggs 

2 cups flour

2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

1/4 tsp. ground cloves

1/2 tsp. salt 

Icing:
3 ounces soft cream cheese
4 tablespoons butter
2 cups powdered sugar
1 tablespoon milk
1 teaspoon vanilla

 


Combine sugar, pumpkin, and oil.  Mix very well.  Add eggs, one at a time.  Stir together flour, baking powder, baking soda, cinnamon, cloves and salt; add to creamed mixture.  Bake in greased jelly roll pan (15 1/2"X10 1/2"X1") at 350 degrees for 30-35 min.  Must use exact size pan.  Do not overbake.

For icing; mix cream cheese, butter, and powdered sugar.  Mix well with electric mixer.  Add milk and vanilla. Spread on cooled bars.
