Pineapple Souffle

This dish is a tasty accompaniment to roast pork or ham. It's sometimes called pineapple casserole or scalloped pineapple.
  • 3 eggs
  • 2 1/2 cups crushed pineapple
  • 2 tablespoons sugar
  • 3 tablespoons flour
  • 1 1/2 tablespoons butter -- melted
  • 1 1/2 tablespoons lemon juice
  • pinch salt
Beat eggs until light; stir in remaining ingredients. Pour into a buttered baking dish and bake at 350 for 45 to 55 minutes, or until the consistency of rice pudding. Serve with ham or roast pork.
Serves 6 to 8 as a side dish.
